I would suggest a little more custome rcontact would be useful. When one is spending £40 - 50,000 a little reassurance is sometimes welcome, even a one line email saying there has been some delay is better than a weeks silence.

Thank you for taking the time to review our service. I am sorry you feel your consultant went a little quiet between taking your deposit and confirming all of your services.
I have had a good look at your booking and I have to say it looks like an amazing trip with some really interesting elements. With such a large and complex booking, and especially when taking into account some special requirements, it always takes a little time to get everything confirmed (even more so when dealing with South America). I totally agree however that a quick email to say "still working on it" would have been useful, and I have made sure that your consultant knows to do this in future!
