I recently ordered some 8-9 oz Hereford rump steaks that were on special offer. Turned up on time, but I was a bit disappointed with them - they are certainly the right weight but are cut rather thin. They seem to have gone with the 'pub' cut - i.e. bigger weight just covers more of your plate. I like my steaks smaller but thicker as I find they stay much juicier when cooked this way, and are easier to cook rare. I'd bought these as an alternative to supermarket steaks - I wanted grass fed beef - but in supermarkets or local butcher you can get a lot thicker steaks (and can choose the thickest) so I'm not sure it was worth the slightly more premium price.
